Job overview

5-7 Days variable shifts with variable rosters. The post holder will be expected to have knowledge of the requirements in relation to preparation, cooking of nutritionally balanced meals as laid out in standard recipes to the highest possible level for both large and small numbers of customers. The post holder should also understand the application of cooking processes, temperatures, in accordance to the Food safety Policy. Compliance with all financial requirements. Management of an efficient and motivated workforce.

Main duties of the job

Guys & St Thomas provides Catering that is produced in house from the Central Production Unit, it prepares and produces over 3500 meals per day for both staff, patient and visitors. The catering department is focused on providing healthy nutritionally balanced meals. The area is managed with a dedicated team striving to provide a high standard of service. The post holder will join a dynamic and skilled team, with the ability to build on the strengths of the current catering services, yet flexible to adapt to future changes to ensure the needs and objectives of both the service and the Trust are met.

Detailed job description and main responsibilities

To help manage food safety across the Catering Department and the wider Trust, providing systems, monitoring and training at all levels to ensure the highest standards of hygiene and food safety.

Will assist with the development of  robust systems, workflows and procedures with monitoring across the hospital food chain from deliveries to patients.

           Preparation, cooking and appearance of all food to a recognised and acceptable standard.

Preparation and cooking of modified diets

           Preparation and cooking of meals for functions as may be required on an ad-hoc basis

           Plan work of kitchen, adjusts work schedules as necessary

           To be responsible for the safe and correct supply & delivery and collection of meals to between Guy's & St Thomas.

To plan and implement new menus whilst keeping within strict financial controls. 

           Observing correct and safe working procedures in accordance with the provisions of the Health and Safety at Work Act.

           To maintain all ‘due-diligence' processes relating to cook-chill cooking procedures as stated in the food safety policy.

           Ensure all food stored in fridges/freezers have correct labelling

           Ensuring economical and correct use of all materials and equipment.

           Observing standards of hygiene and cleanliness at all times.

           Monitoring of provisions cost, payroll and other expenditure levels against budget. Achievement of cost improvements and saving targets as delegated.

Responsibility for staff training, with particular regard to health and safety

and use of equipment.

Use of computerised systems as appropriate. Input daily figures of the foods sent to all restaurants.

Responsibility for catering for special functions and special events as delegated.

Carry out visits, taking ward audit checks, receiving customer feedback, taking food temperatures and quality control audits.

Involvement with and awareness of current market trends and technical advances in food, menu, production and service techniques, IT, equipment and training methods.

Placing of provisions and other orders according to standing financial instructions.

Management of full “due diligence” food hygiene control system, and compliance with all relevant legislation. Responsibility for local pest control.

Full control of all catering stock, supply issues and storerooms. Observance of stock levels (minimum, maximum) and control of perishables.

Management of stock taking of all provisions and non-provision stocks.

Full responsibility for maintaining all equipment and fittings in good state of repair. Timely reporting of all defects.

Full responsibility for the delivery of an efferent, high quality service of Food to our hospitality functions, according to agreed standards of performance as detailed in the Service Level Agreement.

Assure a high level of staff morale and motivation by personal leadership, and communication and appropriate procedures.

Deal with patient feed back and complaints

Control of all staff rotas. Observance of all relevant Trust processes.

Strict control of staff absence and sickness levels.

Cover Kitchen Manager Duties as and when required.

Cover any section of the Kitchen as and when required.

Answer any questions concerning allergies etc,

To undertake training and development courses as deemed appropriate by catering management.

           Maintaining a tidy place of work including undertaking light cleaning duties.

          Maintaining a neat appearance at all times consistent with the Catering dress code.

           Ensuring adequate menu items are available in service areas and assisting in meal service where applicable.

           To report any accident immediately as per the accident procedure.

           Attend training courses where necessary.

           Local flexibility in terms of task and location.

           Carry out the department's self appraisal scheme.

           To promote the service and reputation of the department at all times.

           Any other duties commensurate with the grade for the efficient running of the department.

           Undertake surveys as when required.
